Jonathan Lallemand developed his early hospitality career in Europe before taking Food and Beverage positions with Shangri-La and Hilton across Southeast Asia. By 2017 he was Assistant Director of Food and Beverage at Makati Shangri-La in Manila. His later career included Executive Assistant Manager and Director of Operations responsibilities with IHG Hotels & Resorts in Indonesia, as well as a Resort Manager assignment in Bali.
