Hitotsu Notojima
Hitotsu Notojima is an eight-room sushi auberge overlooking Nanao Bay on Japan’s Noto Peninsula. Ocean-facing rooms accompany a dining experience built around fish and seafood from the surrounding coast, prepared by chefs trained in leading Japanese kitchens. A private wood-fired sauna adds another dimension to the secluded island setting, which reopened following the 2024 Noto earthquake.
